Dear Obi,

Following my visit to your shop, Proudly African Stores, last Thursday, I a=
m just writing to clarify what you need to do now:

In respect of the 'unlabelled' spices and beans - please attach the labels =
as soon as possible to ensure that all products within the store have the n=
ecessary information that is legally required.

With regards to the frozen meat and fish, the products which already have l=
abels attached are fine as your supplier has provided all the necessary inf=
ormation.

The 'unlabelled' products are being sold as non-prepacked goods, this means=
 that although there is no label attached to the goods there is certain inf=
ormation that should be made available for customers.

Fresh meat should be labelled with the following information:

  *   the name of the cut
  *   use by date or in the case of frozen meat, the date it was frozen and=
 a best before date.

  *   and if the product contains added water (i.e. hams).

A further detail that must also be given for meat products is the Country o=
f origin of the product - specifically the name of the country in which the=
 animals were born, raised and slaughtered, followed by the name of the cou=
ntry in which the carcases were cut up.

Currently, you are selling meat and fish products that are supplied in boxe=
s, these boxes are marked with the required information (which should also =
be provided on your invoice from the supplier). It is this information whic=
h must be clearly displayed so that customers can refer to it if they wish.

I would suggest that you re-organise the freezer unit so that all products =
can be easily identified, and the details for each product should then be p=
rominently displayed:
You can do this in 1 of 4 ways:

  *   on the meat/fish
  *   on a container holding the meat/fish
  *   in the shop - e.g. on a ticket near the freezer
  *   on a sign on a wall that your customers can see

You do not have to provide the Country of origin details for Fish, unless i=
t would mislead the consumer to omit this information. However Fish must be=
 labelled with the following:

  *   name of the fish (species)
  *   production method (caught at sea, caught in fresh water, farmed or cu=
ltivated)
  *   Catch area
  *   Any additives
This information could be displayed on a notice on or near the freezer, or =
a sign in the shop, in the same way as the meat.

We discussed the best way to relay this information to customers and you me=
ntioned that you would be happy to display a notice in the shop - The notic=
e could be used to inform customers that further source information is avai=
lable for meat/fish on request. You would need to ensure that you are then =
able to directly provide customers with the correct information.

The non-prepacked meat and fish would also be expected to meet traceability=
 requirements, all food business operators are required to have an identifi=
cation and registration system in place to record the arrival and departure=
 from the business of animals, carcases or cuts (as appropriate) to ensure =
a correlation between such arrivals and departures. The purpose is to ensur=
e that the information provided to the mass caterer or final consumer corre=
sponds to that relating to the batch where the meat came from.
Basically this means that you should have a system to record the meat and f=
ish products supplied to you and sold by you, along with batch numbers and =
other identification details. The product information should be correctly p=
assed onto your customers to ensure that all foods can be traced back to so=
urce if necessary.
